BETTY'S BEST FRESH PEACH PIE

FILLING: 4 C fresh Clark's sliced peaches, 1 C sugar, 1/3 C flour, 1/8 tsp almond extract.  Mix and pour into a 9" paster lined crust.  Bake at 375 degrees for 55 minutes.

 

CRUST: 3 C flour, 1 1/4 C butter flarvored Crisco which includes 1 T lard & 1 tsp salt.  Blen.  Take 1 eff (beat till lemon color), 1 tsp vinegar, 5 T ice water.  Work into the flour mixture with a fork.  Betty Beidelsihis - August 18, 2007 Grand Prize Winner - Palisade Peach Festival

PEACH ICE CREAM

 

2 1/2 C sugar

1 tsp lemon juice

4 C half & half

1 C almonds (optional)

5 C ripe, peeled pitted Clark peaches

Mix all ingredients together and put in 5 quart ice cream machine

PEACH SALSA

4 C chopped ripe Clark peaches

1/2 C diced green chilies

1/2 C chopped onion

1/4 C chopped cilantro

2 T lemon juice

1/2 T garlic powder

Salt to taste

Refrigerate for 2 hours before serving

PEACH COOLER

2 ripe Clark peaches

1/2 C milk

1/4 water

8 ice cubes

1/4 C sugar
